 Fermented  tea, or Kombucha, is not a new thing. In fact, it has been consumed by Asian people for thousands of years. Premium Madi Kombucha  is brewed using some of the finest green tea leaves grown in and around the mountains of Northern Thailand.

Assam Tea, one of the oldest and most desirable teas on the planet, is used to brew the Summer version of Premium Madi Kombucha. “The aims of the Assamica organic estates are to achieve long term sustainability of soil fertility and productivity, protect the environment, and create a form of organic micro-system that produces an economically viable tea that is totally free of chemicals”. Madi’s History

Kombucha – originated in China more than 2000 years ago and now gaining popularity as a health beverage in Europe and America.The actual production of Madi tea can be traced back to the marriage between Thai and Chinese cultures. The Ma family, who migrated to Thailand from China during the 1940s, brought with them generations of knowledge and experience in tea production. Shi Yong Ma later married a Thai woman whose expertise was in the Lanna herbal medicines traditions. Now days, Premium Madi Kombucha is the innovative product of ancient Thai and Chinese cultures and traditions combined with modern hi-tech machinery to produce this wonderful drink we call  Premium Madi Kombucha.

Ma Ci Fu at his early age of twelve started work at Si Pu Tea Factory in Xishuangbanna. It was the largest tea factory in Yunnan Province of China.

1948

He came to Thailand when he was 27 years old. With his brother Ma Ci Rong, they opened a shop called Rong Fu Thai and started tea plantation at Baan Mae Sae in Chiangmai.

Following their footsteps, the second generation led by Suwalee Kiatkarun set up a new company called “Tea Gallery”.

They have used their inherited knowledge to develop a fermented healthy tea beverage called “Madi Kombucha”.

Importance of organic acids in kombucha

 

 


Kombucha is a refreshing beverage with a slightly sweet and pleasantly sour taste obtained by the fermentation of sugared tea with a symbiotic association of probiotic yeasts and bacteria. The main composition of kombucha are acetic, gluconic, glucuronic and various types of organic acids. D-saccharic acid-1,4-lactone (DSL) which is a potent detoxifying agent has been found in kombucha.

Both glucuronic acid and DSL aid the liver to repel toxins and carcinogens. Various antioxidant constituents such as polyphenols including theflavins and therubigins are found to be higher in kombucha compared to black tea. The higher level of antioxidants lead to a stronger free radical scavenging activity and recent research also reveal the antimicrobial and possible cancer preventive activity of kombucha.

We brew two varieties of Kombucha Tea, a Summer Tea and a Winter Tea. Once fermented, the tea is then pasteurized to stabilize and preserve the content. The pasteurized Premium Madi Tea also offers a safe and viable alternative for those consumers who have reservations about consuming the SCOBY contained in the raw product or who may suffer from SIBO (Small Intestinal Bacterial Overgrowth). This great tasting tea drink will bring those consumers into the market so they, too, can enjoy the healthy, nutritious benefits our tea has to offer.
